What is Zeaxanthin?

Almost identical to Lutein, Zeaxanthin (zee-ah-ZAN-thin) is also a yellow compound or carotenoid, produced by plants to absorb light and can only be consumed by animals by eating plants. It is the chemical responsible for the vivid yellow colour of saffron and yellow peppers.
